When I was, I watch Vertica on and off.
I'm not a huge TV watcher, but of course, I try to keep up because of the podcast.
So, when I started way back then, when the show started, I was watching a few episodes in the middle of the chaos.
You show up, and I thought you seem like the most grounded, mature adult.
I've heard that so many times, actually, over the years, over the decade.
It's been since what 2011?
So, over the decade, I've heard that
be my main descriptor.
Is that true?
Or not?
Yeah, it is, actually, you know.
I mean, otherwise, I would not be managing this fantastic restaurant that we're sitting in.
It is fantastic, by the way, guys.
If you're not in the LA area, because I get asked that a lot, and you come here, definitely put on your list top of go to the place because it's gorgeous.
And then you'll, more likely, you know, it's a 70%, 80%
chance you'll see me, you know, because I can't work every day.
So it is true, you do work here.
You still work here.
You are the manager at store.
Because a lot of people think it's all bullshit.
So that's true.
But what I was doing.
You go on my Instagram, you'll see me because I just repost
everybody's pictures when they take pictures with me and when I'm working.
Yeah, I know.
It's so cool that you do that.
You're like, so you're very approachable.
You're a super cool chill guy.
So when my team was like, okay, to God, I started interviewing these people because they're like one of the top-rated shows.
I don't know if it's the top rated on Bravo.
I'm like, okay,
top of my list is Peter.
And I swear to God, because of that, because I felt like sometimes they were arguing, kicking, and screaming, and you show up like super chill.
Like, okay, people.
Like, it was almost like you never let anything around it affect you.
Is there your personality or
grounded?
I'm extremely grounded, actually.
I know, you know, I don't know how...
Spoiler alert, but it's not really a spoiler alert because I've talked about this before, but I don't really watch the show.
I don't watch it.
You know what I mean?
You never watch it?
No, because I was just kind of like...
I love it.
I don't want to see, you know, if I see myself, I'm just like, well, why was that?
Why did I look like that?
Or why was that put in there?
Or I don't know.
It gets weird.
So I'm just, you know, I just leave it alone.
So, you know, with my, what, what I've been told by everybody else, it's like, oh, yeah, you, you always look the best.
And you always, you know, what you say, where you, you come in and you're, you kind of like break up the fights or whatever.
And I'm like, well, that's very much me, you know.
In real life, you're like that.
It's not a character.
I'm grounded.
You're extremely grounded.
Yeah, you don't let anything rattle you.
Like, even in your personal life, like, let's say, I don't know if you have a girlfriend, if you're married, but let's put that out there anyway, because a lot of people are.
No, they're not girl, no girlfriend, no marries just yet.
My team, we were going through the DMs because when I said you were going to be on the show, we were literally getting dozens and dozens and dozens.
And my team started running through it.
So I think out of
ten questions, nine were like, is he single?
Is he married?
Okay, so he's single.
But when you are in a relationship in your real life, are you like that as well?
Like super chill?
Yes.
Yeah, super grounded.
I always try to be, you know, I always try to be as grounded as possible.
I don't know if,
I mean, I think part of it is because I'm the eldest, I'm the firstborn, the eldest of seven.
You have seven brothers and sisters?
Six, yeah.
So seven including,
yeah.
Where are you from originally?
Texas.
Texas.
How long have you been here?
Since 2005.
So it's a long time.
Oh, yeah, no.
I'm a Los Angeles.
Yeah, yeah same yeah so but yeah my parents were roman catholic and they got married and got busy
that's a lot of sickness are they all in texas uh so i live with two of my brothers right now um you know and we all work together on some stuff and i work you know mainly with my brother jude on a couple projects that we're working on right now i did uh a lot of the like the clemato stuff i did last year and the weight watcher stuff i'm doing this year uh he does the all the editing and the filming and all that stuff.

I didn't see that.

Yeah, well, no, I mean, like, I sold.
I designed a bunch of cocktails for Weight Watchers.

I need those, like, skinny cocktails that don't make us fat.

I designed six cocktails for Weight Watchers.
Oh, that is so cool.
That's one thing that, you know, like, I don't really talk about, but I am a mixologist.
I know that.
I've seen that on the show.
I definitely want to talk about the cocktails and your favorite ones.

But every girl in the world wants like a fantastic skinny.
Yeah, so with all of my cocktails, I mean, I had like
I had two that I did with
tea.
I think she's coming in right now.
It's okay.

This is totally 100% organic.
It's real life.

so I had two that I did with tea and then I did one with all of them have all of my cocktails they all have
what do you call it natural fruit.
So all the sweetness that you're going to get from the cocktails
is all from the fruit, the sugars from the fruit, etc.
I love it.
I don't really use.

So the cleaning crew came in with some stuff and they left the door open.

But it's like I said, it's real life.
People love it because I don't bullshit.
Okay, so you make all these cocktails with real food.
Yeah, so all of the cocktails, what they have,
I didn't use.
The only sweetener.
that I actually used on a couple of them was honey.
I love that.
So like half a teaspoon of honey.
But you don't need more too much too much sweetener really really kind of destroys the tree especially if it's a good fruit right yeah so on my on the on my peter rita weight watchers edition i used
i did i did use
i did use uh a little bit of honey i like there's two versions of it honey is optional I like the version with honey, but you don't have to use honey and it just tastes as good.
So I used, on that particular one, I used mango and
those those red little peppers.
Oh, yeah.
Ooh, I love those little red peppers.
So you cut them a little bit, cut a couple of slices of that.
Oh, wow.
Throw that into the blender.
You make like a juice
with the mango and mix it with the red pepper.
That sounds really good.
It is fetched.

Well, I don't make them here.
You can't make it here.
Well, I'll have to bring the ingredients in.
That's something for you.
I don't know if you know anything.
You must know because you're a mixologist, but I'm from Brazil.
And the typical Brazilian drink is the chaiperina.
And this is what I love about chaperina is that they make it with real fruit.
They basically squish whatever.
But lime, sometimes mango, sometimes pineapple, whatever.
It's super fresh.
And I don't know what you're saying.
Yeah, cachaça is like, but you can make it with vodka.
And I love it because, yeah, the fruit is so sweet and you don't have to
crap in it.
You don't have to use a simple syrup.
You don't have to use, and that's the one thing.
I mean, with the
clemano cocktails that I did last year,
I actually designed a couple of different simple syrups for it.
So I, you know, it's easy to make a simple syrup at home.
You just use the water and the sugar.
But then on one of them, for instance, I called it the bichelata
because I did a bunch of michilatas.
And the bichelada was, I used a ginger simple syrup.

But let's backtrack the start a little bit because everybody wants to ask about the show and everything that happened.
But you were here at Sur before the show, correct?
Can you tell us like how you ended up here and how long were you here before they came and offered the show?
So, uh, I so in 2008, I graduated from the University of Southern California, home of the Trojans.
Yay, go Trojans.
Yeah,
they're doing pretty well this year, actually.
They're going hard, right?
I know.
I love it.
Caleb Williams, you know,
we finally got another Heisman Trophy winner on our squad.
But anyway, so
I graduated and I was kind of looking for a job.
And I was working at this place called Clomonica, which no longer exists on Sunset.
They closed it down right when I started working here.
And Guillermo comes in, one of the owners of this establishment.
He comes in and we start talking.
He's like, you know, you should work at my restaurant.
Now, I didn't put two and two together.
Okay, because at the time,
there was another person that was working here that happened to be, because I was kind of, we were kind of, I was kind of living in a frat house.
It was a two-bedroom apartment with five dudes.
Oh, my God.
Well, you were super young.
Yeah, I was super young.
I was directly out of college.
That's what guys do.
Yeah, exactly.
We're trying to figure it out.
You know what I mean?
So it was was myself uh paul my brother paul and jude our adopted brother zeph and then this other guy named arthur okay have you ever seen the movie pineapple express yes okay a long time ago but i did watch it so there's an opening scene with ebber heard
and you guys should have seen the face he made now
and seth rogan and they're in this the hallway of the of the um
of the high school right and this guy this kid this redhead kid comes over and he's all like, oh, don't worry, I'll take care of it when we get to high school.
He's like, all right, Tech was up today's dick, right?
Slaps Seth Rogan on the shoulder and leaves.
That was my roommate, Arthur, at the time.
Oh, really?
So he was filming that movie
while he was living with us and working here at CERC.
Cool.
So at the time, I asked him, hey,
I want to change things up.
I'll be a buster, whatever.
And he was all like, yeah, yeah, you know, Sir is looking for some.
And again, I didn't put two and two together.
So I'm walking around the corner here on Melrose in Robertson, and Guillermo's working with the curtains, and I'll never forget it.
And he was all like, oh, hey, yeah, you're hired.
Come on in.
Get to work.
And it's basically how I started.
So
you started as a busser.
Yeah, I know.
I read that.
And it's such a beautiful story because you're a kid fresh out of college.
You start as a busser and you worked your way up to the point that you became manager.
Yeah, so I also knew how to bartend at the time.
I already knew how to do that.
I dabbled a little bit with it in college, you know, so I had been bartending at that point for a few years, actually.
Now it's going on almost 20 years.
I've been bartending.
You must make a house.
Yeah, exactly.
And that's why I get hired for certain jobs, going back to, you know.
So when they came, when Bravo came and said, we're going to do a show here, were you already a manager?
Yes.
When the show started.
So you've been with the show from the very beginning.
Since the inception, yes.
But in the beginning, they didn't show you that much.
They did, they showed me, apparently, they showed me a lot.
But I did a podcast, I was on Kristen Dodie's podcast.
Oh, I like her a lot.
She has like such a strong personality, right?
She does.
So, I so we recorded her podcast at my place.
Okay, and then uh, and they actually, you know, it's funny, is there was a
picture that she and I took outside of it was like a TikTok that we did outside right outside when we came in,
and uh, that kind she put on the green dress from some episode or something.
I can't remember what season it was, but you know, she put it on.
And it was that day that we did her podcast.
So I'll have to look up the exact day that we did, we recorded it.
But she was all like, Peter, you're the unsung hero.
You're the main character of season one.
I don't know if you know that.
I gotta go back and watch season one again.
I was all over the place.
Like, I was, I was, like, literally, like, I had, I remember managing the place, and I remember Stasi coming over to me and being like,
um,
uh, Lorelee's in my section.
Why is she in my section?
I was like, first of all, she came in first, someone needs to take that section.
We got customers here, go do something, get some work, yeah, you know, okay, so let's rewind for the people.
I know they're gonna ask all this question.
They come, they offer the show, and you said yes, no problem.
I'm gonna be on hair.
Did you think, did I mean, because now it's it was, well, 11 years ago, right?
A decade ago.
Over a decade ago.
Do you, like, at the time, did you think, like, oh my God, this show is going to be so successful?
This is crazy.
Or you were like, whatever.
I didn't think,
here's the way I put it.
So there was this other manager that we had at the time.
She came up to me, and I'll never forget it.
She came up to me, and she was all like,
Peter, why are you doing it?
you know, because apparently, like, everyone, I didn't want to be an actor.
You know, I did it, but I didn't really want to do it.
I don't know.
I was just kind of like gave up on that.
And she came up to me and she's like, you know, I can't believe you want to do it.
Blah, blah, blah.
I was literally like, well,
if it's moderately successful, that'll get me to the next level of where I want to go.
Yeah.
If it's just, if there's just a little bit of success, it'll get me to where I need to go.
You know what I mean?
And then...
And then it blew up.
It blew up.
And then everyone's all like, oh, I should have done it.
I should have done it.
It's like, yeah, you should have done it.
So how did it work?
Did they hand the people that were
Lisa picked a bunch of people?
She picked myself, she picked Jazz, she picked everybody that was here.
Everybody that was working here already.
Yeah, we were all working, yes.
Okay, so
everybody, like I said, Stasi, all those people were all employees of Surah.
Yes.
Because there is a lot of talk, I don't know if you see it on social media, that oh, it's all stage.
These people are actors, they pick them because they're beautiful, blah, blah, blah, blah, blah.
So, can you clear that?
Yeah, I can clear it right now.
I work here i've been here since 2008
and every single person with the exception of tom schwartz worked here so what how did okay we are gonna have to jump on that but how so he never worked here no he was just dating katie oh really katie worked here oh yeah yeah so because they put him on such a huge part of the show It wasn't until around season two, but it's because he was dating Katie, though.
Oh, so he never worked this.
So what does he do?
What did he do before?
Matter.

for anybody that's wondering what a matter is, it's a model actor.
Which is very common here.
Actually, no, now everyone wants to be either an Instagram, TikTok influencer.
Now, no one wants to be a Mactor anymore.
Now everyone wants to be a TikTok Instagram influencer or a reality show.

But in LA, you know, there's this old joke long before you, that every waiter in LA, they're like, I'm not really a waiter, I'm an actor.
I'm an actor.
Yeah.
Now we kind of developed into like, yeah, I'm not really a waiter, but I'm on this.
I'm a personality.
Oh, my God, that's so funny.
I'm a personality.
Okay, so the initial cast, everybody was working here, including Stasi.
Yeah.
And then after.
Her section
was main room one through six.
And she was dating.
I was trying to remember everybody's name.
I was like doing a lot of homework.
Jack was a bartender here.
So he was a bartender.
Yeah.
And he was really mean to her and all that chaos.
Yeah, there was a lot of chaos that came from that.
But that was like real life.
That was the calm of the chaos.
Yeah, you were the calm of the chaos.
But the shit that they were filming, it wasn't like a script, was it that they were reading?
It was really, really happening, and they were rolling the camera.
Yeah, that's why, and that's why we were picked over Villa Blanca.
Because Villa Blanca is very chill.
Well, yeah, but we had, I had, I had to deal with chaos.
So, okay, so let me ask you if if it's true okay they're they're fighting they're dating each other because normally in the workplace you're technically not supposed to date co-workers
that's that's not a thing it's not a thing yeah you can date a co-worker because you know like how some companies they because they don't want chaos they're kind of like hey yeah but you're not but but you're not going to be able to just tell people what they can and cannot do okay you know what i mean it's like that's kind of like invasive true i like that but i a lot of companies do believe it or not yeah I understand that but I mean it's like so what are you gonna be guarding the bedroom I know okay so these people are dating and they're on a reality show and they're fighting and they're gonna they're bringing all their drama into work did you ever think like oh my god I gotta fire this person it's too much
Actually, yeah,
I remember in season three, we had a meeting over there, and it was James Kennedy and Kristen Doty who ended up getting axed.
Actually, James fought his way back in, but Kristen Doty ended up that season getting axed.
Oh, yeah, so she did get get fired.
Yeah, she did.
What did she do?
She insulted Diana.
So Diana and I managed this place together for over a decade, and she actually just
resigned back in the beginning of June of this year.
Diana was the blonde one.
The brunette.
She was from Bulgaria.
She didn't.
She came out in one scene.
It was the one scene that got Kristen fired.
It took place actually right over there.
And it was when Kristen was all like, and even to this day, Kristen was like, I can't believe I told that to Diana because her and Diana are very good friends.
She was like, Flip the dick, Diana, flip the dick.
And that's on the show.
Oh, she said that?
Yeah, she said that.
And it was like a huge, because I can't remember the situation.
I think it had something to do with Miami Girl or whatever with
Tom Sadival cheating and something along those lines.
She's like, back on now, I'm not even going to get into that right now.
But
so
that happened right over there.
And because of that,
uh,
not only being disrespectful to a manager, but also
uh being loud at your place of work and not, you know, yeah,
yeah, yeah, she was axe.
I love her because I like her personality, but I thought she was a little unhinged sometimes.
Well, yeah, like you know,
people grow up, I guess.
Do you think most of them grew up, or because I like to, I like to think so.
No, no, well, Jax grew up yeah right he got married yeah to the what's the Britney she so Britney comes from where is she from she's from a lot of
Kentucky so here comes this girl from Kentucky in the middle of this chaos Los Angeles na na na na and she asked for a job here right yeah and who did she ask for like you or
Jax went directly to Lisa on that one ah okay yeah so she got hired because of Jax basically and they decided so is he was he here?
Did he ever get fired or he was here for a while?
No, he kind of like to resign too, you know.
Okay, so he resigned but he never got fired.
And then he got back together with Brittany.
How was she?
Does she did she work here for a while?
Was she a good employee?
She was solid.
She was a solid employee.
She she, you know, she
All I ask from all the servers is to make sure you're on top of your tables and make sure that your tables get water refills and get the drinks.
Because see, like when you when you when you get people refills on drinks when you ask them what they want other you know that's more money in your pocket you know because it's a higher tip right and people appreciate that you know yeah trust me i was at dinner last night
and um where i was at uh this place called alma alma i haven't been there yet
and uh the waiter was uh was pretty you know on top of things you know what i mean that's how you're supposed to be right
i i wanted you know of course it started off kind of shaky because i was like where's my drink where's Where's my cocktail?
Right.
And it took a while to get my cocktail, but then finally, like, he started up.
I have to say, I have to.
It was my first night drinking, actually, in a while.
I cut back a lot of the.
I mean, I still drink a little wine, but it's not like.
I only drink wine and very rarely a cocktail.
And I have to say, this is God's Honest.
I live like five minutes from here.
So I have been, because many times I have friends around the town and they want to see certain.
And I never ate here, but I've been to the bar, sat around here for many, many times.
and just my experience, people, the servers are always on top of it.
Like, I've seen this place packed,
and you know, many times you go to these places in West Hollywood and Beverly Hills, and yeah, you're waiting there forever, even other bars that I'm not even gonna mention because I don't want to cause problems.
But and here, the few times that I came, they're like all over you, like, do you want to appetize, doing this, doing that?
I noticed that you have like a super fast staff, so this is this is 100% true.
I never try the food, maybe I'll come next time.
I have friends.
Well, I have to, you know, you have to kind of like make sure that everyone's doing their job.
Yeah.
You know what I mean?
Yeah.
And a lot of
the staff actually gets it.
I mean, they understand, especially after doing it for such a long time.
They're like, okay, got it.
Yeah.
So at this point, all the people that were on the show,
they left.
Nobody works anymore, just you.
Just me.
So that says a lot about you.
Like, you're the first one standing, and you're the last man standing,
and you keep your cool throughout the chaos.
You don't care if they date, it's all like a complete night.
I mean, well, you go to any restaurant, though, you go to any restaurant, a lot of the staff is dating as it is.
Yeah, I mean, I did not know that.
Well, I mean, my mom was a restaurant owner in Brazil, but I mean, it's I did not know that people date a lot.
Have you ever
worked at a restaurant before?
I worked, like, when every time I would go visit my mom, like, I would spend a month there, two months, and work at her restaurant.
restaurant.
Maybe it was like older people or stuff.
I don't know.
I don't know.

old members ex members of the cast who have i think come back recently oh yeah uh kind of affect your reception yeah and cause you to re-evaluate all of the relationship you've had for the last 11 years oh my god yeah we evolve we grow right we change Yeah, and a lot has changed for me, especially in the last six months, you know, since this whole thing broke.
So it's March, April, May, June, July, August, September.
Seven months.
Yeah, it's been very crazy.
But after that date, then they showed a few scenes.
Like, I don't remember the details, but she's like talking to a friend, like, oh, yeah, I mean, we're not going to date.
And then, yeah, we're going to date.
And then there was like a dialogue, the choice of you.
And you kind of were like, yeah, no, let's just be friends.
And then she was upset
because because uh i remember i looking back on it it's like lisa comes and tells me you can't be dating the staff and i was like well she would she's not on the staff you know but she's just barely so she thinks staff shouldn't date yeah yeah well no no no management
and i've never dated the the staff as a manager uh-huh you know what i mean so
So she came up to me, she's like, you can't date the staff.
And I was like, well,
first off, she wasn't, but okay, cool.

And I was getting drunk that night.
It was the daily mail party at Schwarzenegger.

And then afterwards,
Raquel came up to me and was all like, you know, thank you so much for everything.
But, you know, I think we should stop, you know, hanging out or whatever.

And it's mainly because of what Lisa told me two seconds prior.

But then, as time progresses, then you're like, okay, go back to being
